Worth booking in shoulder months too, April or October, still pleasant, fewer people than peak, prices dip a bit. Great for avoiding the thick tourist wave.
Skip summer, May to September, unless you love heat. Temps hit 40C+, humidity high, most people hide indoors, outdoor experiences feel impossible. Not peaceful at all.

If I was landing in Dubai for the first time, I'd book Desert Resort Al Maha for the first few nights to reset with dune drives and quiet evenings, then move to a Modern City Suite for the skyline buzz.
